Winter Slaw Salad

This is even better the next day

Ingredients

6 oz brussels sprouts, shaved or thinly sliced

6 large kale leaves, thinly sliced

1 small head of radicchio, cored and thinly sliced

1/4 c lemon juice

1/2 c olive oil

1 t kosher salt

1/2 t pepper

1 c cranberries

1/2 c sliced almonds, toasted

Directions

Combine vegetables.  Whisk lemon juice, oil, salt and pepper.  Pour over slaw and toss in cranberries and almonds.
