Deconstructed Egg Roll

quick and easy

Ingredients

2 t. sesame oil

1 lb ground turkey or pork

3 cloves garlic, minced

1 T fresh ginger, minced or grated

6 scallions, thinly sliced 

14 oz bag cole slaw 

1/4 c soy sauce

2 T mirin

1 t sriracha

2 eggs, beaten

8 oz can diced water chestnuts, drained

Crispy wanton strips or Chinese noodles

 

 

Directions

Heat oil in large pan or wok and brown meat.  Add garlic, ginger, and scallions and saute 3 minutes.  Add slaw, soy, mirin, sriracha, and water chestnuts.  Cover (this helps wilt the cabbage) and saute 10 minutes until cabbage is cooked.  Create a well and add eggs to scramble.  Serve and top with wanton strips.

Serves 4.
