Brunswick Stew

Thalia Williamsburg recipe

Ingredients

1 whole chicken, cut up

1 onion, quartered

2 ribs celery, diced

1 tsp salt

1/4 tsp pepper

16.5 oz white shoepeg corn

10oz frozen small butterbeans

1lb. can diced tomatoes

2 small potatoes ,cubed

1/3 cup ketchup

2 - 3 T vinegar

1 T brown sugar

1 tsp worchestershire sauce

1/2 tsp tabasco

1/4 tsp marjoram

2 - 3 T butter

Directions

Place chicken in dutchoven and add water to cover.  

add celery, onion, salt &.   pepper.  Boil until chicken comes off the bones easily  Remove chicken and remove from bones.  Let broth cool and remove fat.

Add the rest of the ingredients.  Cook 2 hours.
