-Japanese chicken wings-

Ingredients

chicken wings             -    1.7lbs

ground black pepper  -   1/2 teaspoon

salt                              -   1/2 teaspoon

light brown sugar       -   1/4 cup

soy sauce                    -   3 tablespoons

sake                             -  1/3 cup

ginger juice                 -   1 teaspoon

garlic                           -   1 medium clove

black vinegar              -   1 tablespoon

potato starch              -   1 tablespoon

vegetable oil for frying

toasted sesame seeds -  2 teaspoons

Directions

  1. Tray the wings and sprinkle half of the salt and pepper / toss
  2. Put sugar, soy sauce, sake, ginger juice, and garlic into a pan and start a glaze. Heat on medium-high heat until it starts to thicken.
  3. Add vinegar and transfer into a large bown so it can cool
  4. Add 2ish inches of vegetable oil to a pot and heat to 320 degrees F
  5. Remove as much moisture from the chieck as possible
  6. Sprinkle potato starch and toss the wings
  7. Fry for 10 min in batches
  8. Increase temp to 375 F untill golden brown
  9. Toss wings in the glaze bowl
  10. Sprinkle toasted sesame seeds and black pepper
