Easy Macaroni and Cheese

No making a roux!

Ingredients

4 1/2 c milk

8 oz cream cheese (or 1 c cottage cheese or 1 c sour cream)

1 1/2 t salt

1 clove garlic, minced

1 t mustard powder

1/2 t black pepper

pinch nutmeg

pinch cayenne

1 lb elbow macaroni

1 lb (5 cups) grated cheddar cheese (or sub in some jack, gruyere, brie, etc.)

4 T butter, melted

1/2 c parmesan cheese

1/2 c panko bread crumbs

 

Directions

Heat oven to 425.  In a blender, combine milk, cream cheese, and spices.  Blend until smooth.  Spray 9x13" pan.  Put the macaroni in the dish.  Scatter cheese on top.  Pour milk mixture over all.  Make the topping by combining melted butter, bread crumbs, and parmesan and sprinkle on top.  Bake for 20 minutes then decrease temp to 350 and continue baking until top is golden brown about 20-30 minutes.  Let rest at least 10 minutes before serving; this gives pasta a chance to absorb all the milk.  

Makes 6-8 servings.
