Potato Chip Omelet

From the NYT, seriously

Ingredients

12 large eggs

6 oz potato chips (I used plain Kettle Chips.  Flavored chips would probably be great.)

1 T olive oil

Salt and Pepper to taste

Directions

Turn oven to broil.  Crack eggs in a large bowl.  Whisk eggs until frothy and lightened in color, about 4 minutes.  (I was lazy and used a mixer on medium.)  Heat 10" oven-proof skillet on stove on medium heat (I used cast iron.)  Add potato chips to eggs, gently folding to ensure chips are coated.  Salt and pepper to taske.  Let chips soak for 1 minute.  Add olive oil to pan.  When it's hot, pour eggs and chips into pan.  Use spatula to distribute chips evenly in pan.  Cook 3 1/2 minutes.  Move pan to oven under broiler.  Broil 3 minutes.  Lower oven temp to 350 and cover loosely with foil.  Bake until eggs are firm, 7-8 minutes.  Rest for a few minutes before slicing and serving.
