Slow Cooker Hawaiian Barbecue Ribs

No fuss. No grill.

Ingredients

2 small racks baby back ribs (about 2 lbs each), cut in half

salt and pepper

2 T vegetable oil

3 T chile powder

2/3 c Sweet Baby Ray's barbecue sauce

1/3 c apple cider vinegar

1 T grated fresh ginger

2 cloves garlic, minced

1/4 c pineapple preserves

2 T ketchup

 

 

Directions

Spray inside of slow cooker.  Generously season ribs with salt and pepper, then rub with oil and sprinkle with chile powder, pressing to adhere.  Whisk 1/3 c barbecue sauce, vinegar, garlic, and ginger in slow cooker.  Add the ribs and turn to coat in the sauce.  Cover and cook on low about 7 hours (or 2 hours on high then 4 hours on low).  Transfer ribs to sprayed baking sheet.  Remove 1/4 c of the cooking liquid to a small bowl and whisk in remaining 1/3 c barbecue sauce, the pineapple preserves, and the ketchup.  Brush the pineapple sauce all over the ribs to coat completely, arrange on baking sheet bone-side down.  Broil in oven until the sauce is sticky and ribs are slightly browned, 3-5 minutes.
