Chili

Easy, and great on a cold night!

Ingredients

1/4-1/2 t hot sauce

1/2 t ground red pepper (Cayenne)

1 can tomatoes (28 Oz) (I do whole tom. But break them up)

1 can tomato sauce (1 cup can use spaghetti sauce)

1 med onion, chopped

1/2 green pepper, chopped (I do a whole pepper, add a red bell pepper if I have it..there are no mistakes!)

1 clove garlic, minced (I used jarred)

1 lb ground beef 

1 can kidney beans (1 lb)

1/2 t salt

*For spicier chili add: 1 t chili powder and 1/2 t oregano (I always add these!)

Directions

    Cook kidney beans over low heat w. 1/2 t salt, 30 min. Stir occasionally.  While beans cook, heat oil in frying pan, add onion, green pepper, & garlic about 5 min. I put these veggies into another pot. Add beef to the frying pan, cook until browned. Drain fat. Add cooked beef, beans, seasonings, tomatoes & sauce to the pot w veggies. Bring to a boil. Reduce heat to low & simmer 45-55 min, or until it has thickened. 
  Can serve w grated cheddar cheese, oyster crackers, or any toppings you choose.
