Spinach Artichoke Dip

Good warm or cold

Ingredients

2 cans artichoke hearts, rinsed and squeezed dry

1 package frozen chopped spinach, thawed and squeezed dry

1 can cannellini beans, drained and rinsed

2 scallions, chopped

4 T lemon juice

 

Directions

Place ingredients in a food processor (or blender) and pulse until well mixed.  Serve with crackers or tortilla chips.
