Turkey and Barley Salad

Easy dinner

Ingredients

3/4 c quick cook barley

4 c arugula

2 c. shredded roasted turkey (rotisserie chicken meat is perfect for this)

1/2 c dried cranberries

3 T olive oil

2 T lemon juice

salt and pepper

Directions

Cook the barley according to package.  Drain and rinse in cold water.  Make dressing with olive oil, lemon juice, salt and pepper.  Combine barley, arugula, meat, and cranberries. Toss with dressing.
