No Bake Fruit and Nut bars

makes 16-24 depending on how you cut them

Ingredients

1 c pitted dates

1/4 c almond or peanut butter

1/4 c honey

1 t vanilla

1 c roasted, slightly salted almonds

3/4 c salted pepitas

1/2 c rolled oats

3/4 c dried fruit (raisins, cherries, strawberries, blueberries, whatever)

 

Directions

Put dates in food processor and pulse until they become a ball.  Put dates in a large bowl and stir in honey, nut butter, and vanilla.  Add nuts and fruit and stir until well combined.  Line a 9x9 pan with wax paper and press mixture into pan.  Place in freezer for 30 minutes.  Pull bars out with wax paper and cut.
