Lemon Chicken Orzo Soup

Easy!

Ingredients

8 oz orzo

1 t. olive oil

3 carrots, chopped (I buy the match stick carrots and rough chop them.)

3 ribs celery, chopped

1 onion, chopped

2 cloves garlic, minced

1/2 t dried thyme

1/2 t dried oregano

1 bay leaf

32 oz chicken broth

1/2 c. lemon juice

1 lemon, zested

8 oz cooked chicken, chopped

8 oz baby spinach (or chopped kale or collard greens)

salt and pepper to taste

Directions

Cook orzo in boiling water for 5 minutes, drain and rinse in cold water.  Saute onion, celery, and carrots in olive oil until soft.  Add garlic.  Add spices and saute 1 minute.  Add chicken broth.  Bring to boil, partially cover, and cook 10 minutes.  Stir in orzo, lemon juice, and zest.  Add chicken.  Cook 5 minutes.  Add spinach and cook until wilted.
