Spinach Madeline

Celine's friend Kelly made this for Thanksgiving dinner in CA

Ingredients

4 T butter

3 T flour

2 t. celery salt

1/2 c evaporated milk

8-12 oz pepper jack cheese, diced (this makes it really spicy.  Julie uses 6 oz pepper jack cheese and 6 oz monterey jack cheese)

1 small onion chopped

1 dash Worchestershire sauce

2 pkg frozen chopped spinach

tobasco to taste

Directions

Saute onions in the butter until soft.  Add flour and seasonings and saute 2 minutes.  Add milk and cheese, stirring.  Drain spinach very dry, saving 1/2 cup liquid.  Add liquid and spinach to cheese mixture.  Simmer 15 minutes, stirring.  Place in casserole and bake at 350 for 20 minutes.  You can make this ahead and even freeze it but will need to bake it longer if cold.  And can be served with crackers as an appetizer.  And you can add chopped artichoke hearts and more liquid for spinach and artichoke dip.
