Chicken and Sausage Gumbo

Great gumbo with easy-to-find ingredients
Ingredients
- 4 qts. turkey broth (chicken if you have to)
- 3/4 c. vegetable oil
- 3/4 c. flour
- 1 big yellow onion, chopped
- 1 small/medium green pepper, chopped
- 1/2 c. celery, chopped
- 1 T salt
- 1/2 t. cayenne pepper
- 1/2 lb andouille sausage, chopped
- 3 c. turkey or chicken
- Rice
Directions
- Prep onions, pepper, celery, and sausage - you won't have time once you start the roux
- Combine oil and floud in a large pot. Cook over medium heat, stirring frequently for 20-25 minutes until you have a light chocolate colored roux
- Add onions, pepper, celery, salt, and cayenne and stir for 5 minutes
- Add sausage and stir for 5 more minutes
- Add broth and bring to a boil, reduce heat to simmer uncovered for 45 minutes - the longer the better
- Start the rice about 30 minutes out
- Add turkey or chicken and summer for 15 minutes
- Serve over rice
