Chicken and Sausage Gumbo

Great gumbo with easy-to-find ingredients

Ingredients

  • 4 qts. turkey broth (chicken if you have to)
  • 3/4 c. vegetable oil
  • 3/4 c. flour
  • 1 big yellow onion, chopped
  • 1 small/medium green pepper, chopped
  • 1/2 c. celery, chopped
  • 1 T salt
  • 1/2 t. cayenne pepper
  • 1/2 lb andouille sausage, chopped
  • 3 c. turkey or chicken
  • Rice

Directions

  1. Prep onions, pepper, celery, and sausage - you won't have time once you start the roux
  2. Combine oil and floud in a large pot.  Cook over medium heat, stirring frequently for 20-25 minutes until you have a light chocolate colored roux
  3. Add onions, pepper, celery, salt, and cayenne and stir for 5 minutes
  4. Add sausage and stir for 5 more minutes
  5. Add broth and bring to a boil, reduce heat to simmer uncovered for 45 minutes - the longer the better
  6. Start the rice about 30 minutes out
  7. Add turkey or chicken and summer for 15 minutes
  8. Serve over rice
