Cream Wafer Cookies

So much easier after we figured out we can turn the dough into slice and bake logs!

Ingredients

For cookies:

1 c butter, softened

1/3 c whipping cream

2 c flour

1/2 c sugar for dredging

For frosting filling: (I usually double this so there's plenty.)

1/4 c butter, softened 

3/4 c powdered sugar

1 t vanilla

green food coloring

Directions

Cream butter and mix in whipping cream and flour.  Form dough into a couple of 1 1/2" thick logs.  Wrap in wax paper and saran wrap and freeze until very firm.  )If it's totally frozen when you want to bake, let it thaw just a bit so it's still firm but you can slice it into circles without cutting one of your fingers off.)  Slice dough into 1/8-1/4" thick circles.  Dredge both sides in sugar.  Place on baking sheet and stick each circle 3 or 4 times with a fork.  Bake at 375 for 7-9 minutes being careful not to brown them.  Remove and cool completely.  Mix ingredients for filling to make frosting and make cookies into sandwiches.
