(Huzzah!) Fried Chicken

Fried chicken recipe from my food truck that never happened...
Ingredients
- 1 lb. chicken tenders
- 1 c. all-purpose flour
- 3 eggs
- 1 T. old bay (mix salt and paprika if you don't have the good stuff)
- 1/2 T. red pepper flakes (or to taste)
- 1/2 T. black pepper
- 1/4 c. butter milk (regular if you have to, but it makes a difference)
- 2 c. peanut oil (canola if you have to, but...it also makes a difference)
Directions
- Mix flour and spices - the "dry bowl"
- Mix eggs and milk - the "wet bowl"
- Coat the chicken: dry-wet-dry. Keep one hand for the dry bowl, another for the wet.
- Fry when oil hits 350-375
- The oil temp will drop - keep it between 300-325
- Fry for ~5 mins, but use a food thermometer...it's 2020...chicken = 165 degrees internal
