(Huzzah!) Fried Chicken

Fried chicken recipe from my food truck that never happened...

Ingredients

  • 1 lb. chicken tenders
  • 1 c. all-purpose flour
  • 3 eggs
  • 1 T. old bay (mix salt and paprika if you don't have the good stuff)
  • 1/2 T. red pepper flakes (or to taste)
  • 1/2 T. black pepper
  • 1/4 c. butter milk (regular if you have to, but it makes a difference)
  • 2 c. peanut oil (canola if you have to, but...it also makes a difference)

Directions

  1. Mix flour and spices - the "dry bowl"
  2. Mix eggs and milk - the "wet bowl"
  3. Coat the chicken: dry-wet-dry.  Keep one hand for the dry bowl, another for the wet.
  4. Fry when oil hits 350-375
  5. The oil temp will drop - keep it between 300-325
  6. Fry for ~5 mins, but use a food thermometer...it's 2020...chicken = 165 degrees internal
