Sour Cream and Walnut Coffee Cake

Ingredients

3 c flour

1 1/2 t baking powder

1 1/2 t baking soda

1/2 t salt

3/4 c butter

1 1/4 c sugar

3 eggs

2 t vanilla

1 pint sour cream

1 c light brown sugar

2 t cinnamon

1 c chopped walnuts

 

Frosting:

1 1/2 c powdered sugar

1/2 t vanilla

water

Directions

Preheat oven to 350.  Mix flour, baking powder, soda, and salt and set aside.  Cream butter with mixer and gradually add sugar and beat well.  Add eggs one at a time, beating thoroughly after each addition.  Add 2 t vanilla and mix in.  Add dry ingredients alternately with sour cream, beginning and ending with dry ingedients.  Mix well until smooth.  Mix together brown sugar, cinnamon and nuts.  Pour about 1/3 batter into well greased bundt pan, then sprinkle with 1/3 nut mixture.  Repeat layers twice more, ending with nuts on top.  Bake for one hour until cake tests done.  (Cover loosely with foil at the 45 minute mark so nuts don't brown too soon.)  Cool 5 minutes and remove cake from pan.  Cool completely.  Mix powdered sugar and vanilla with enough water to make a frosting.  Spread on top of the cake allowing it to run down the sides.
