Apple Walnut Cake

Great autumn cake recipe that came from our neighbor in Kings Park, Gloria Beck.

Ingredients

4 cups coarsely chopped apples

2 cups sugar

2 eggs

1/2 veg oil

2 tsp vanilla

2 cups flour

2 tsp baking soda

2 tsp cinnamon

1 tsp salt

1 cup chopped walnuts

Directions

Preheat oven to 350.  Grease and flour a 13x9 pan.

Combine apples and sugar.  Beat eggs slightly.  Beat in oil and vanilla.

Mix together flour, baking soda, cinnamon and salt.

Stir in dry ingredients alternately with the apple and egg mixture. Stir in walnuts.

Bake for 45 minutes to an hour.

It's a very moist cake and doesn't need frosting.

Mom used to serve it with a dollop of Cool Whip.
