Williamsburg Orange Cake

One of Dad’s favorite birthday cakes

Ingredients

2 3/4 cups cake flour or 2 1/2 cups all purpose flour

1 1/2 cups sugar

1 1/2 tsp baking soda

3/4 tsp salt

1 1/2 cups buttermilk

1/2 cup butter, softened

1/4 cup shortening

3 eggs

1 1/2 tsp vanilla

1 cup golden raisins

1/2 cup finely chopped nuts

1 Tbl grated orange peel

Frosting:

1/2 cup butter, softened

4 1/2 cups confectioners sugar

 4-5 Tbl orange juice

1 Tbl grated orange peel

 

Directions

Preheat oven to 350.  Grease and flour baking pans, two 9", three 8" or 13x9".

Measure all ingredients except frosting ingredients into large bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes at high speed, scraping bowl occasionally.

Pour into prepared pans.

Bake 13x9 for 45-50 minutes, layers 30-35 minutes or until wooden toothpick comes out clean. Cool.

Frosting:

Blend butter and sugar. Stir in orange juice and orange peel. Beat until smooth.

Frost cooled cake.
