Ritz Chicken

Jay and Ian will tell you I made this every 3 days with rice and broccoli . . . and maybe I did.
Ingredients
4 thin sliced chicken breasts
1/2 c flour for dredging
2 eggs, beaten
1-2 sleeves of Ritz crackers, crushed (They sell Ritz crumbs at the grocery store now! Life changing.)
Butter
Directions
Dredge both sides of chicken in flour, dip into egg, then press into Ritz crumbs. Melt butter in frying pan and brown both sides of chicken. Put a cooling rack on a baking sheet and spray with Pam. Place browned chicken on rack and bake at 350 for about 20 minutes (until chicken is cooked through).
Modifications:
If you don't want to bother with the frying, coat the chicken as directed and place it on a baking sheet. Drizzle with melted butter and bake at 350 for 20-25 minutes until cooked.
If you don't have a cooling rack, you can put it directly on the baking sheet (the bottom just won't be as crispy).
