Bombay Chicken

Ingredients

1 21/2 to 3 lb. fryer

1/3 cup flour

1 tsp papricka

1/4 cup butter

1 medium onion, thinly sliced

4 chicken boullion cubes

31/2 cups boiling water

1 cup uncooked long grain rice

1/2 cup light raisins

1/2 cup flaked coconut

1/4 cup coarely chopped peanuts

1 tsp curry powder

Directions

Coat chicken with mixture of flour, 1 tsp salt,dash of pepper and the papricka. In skillet brown chicken and remove.  In same skillet cook onion in remainiing butter till tender but not brown. Dissolve bollioun cubes in boiing water, add to onions.  Stir in remaining ingredients.

Turn rice into a 12 X 71/2 X 2 baking dish.  Top with chicken. 

Bake _covered in 350 oven for 11/2 hours or until rie is cooked and chicken is tender.
